I Like Big Bowls…

I cannot lie, I love giant bowls. One of my favorite purchases over the last year for my predominately whole-food plant-based diet has been a set of Giant Bowls. They are incredible for making really big salads and grain bowls. My bowl tonight included brown rice, lentils, a veggie burger, kale, Brussels sprouts, purple cabbage, cauliflower, coleslaw mix, and hummus. It was so healthy and tasted incredible. 3 years ago there is no way I would have eaten many of the ingredients in this bowl. Now there is not much that tastes better to me. The ingredients are nutrient dense, high in fiber and low in calories. Because of this you can eat large volume that leaves you feeling satisfied. If you prep the ingredients on the weekend and have them in the fridge it just takes a few minutes to make a dinner like this during the week.
